CHICKEN SAN FRANCISCO 
Boneless chicken breast fillet, 1 each person
Grated Cheddar cheese, 1 tbsp. each person
Broccoli spears steamed crunchy, 1 each person
Bacon, cooked crisp, 1 each person
Toasted almonds, sliced, 1 tbsp. each person

CHEESE SAUCE:

2 tbsp. butter
2 tbsp. flour
1 1/2 c. milk
1 c. grated cheese
1/2 tsp. salt
1/4 tsp. white pepper
1/8 tsp. paprika
1/2 tsp. dry mustard

RICE PILAF:

May use frozen Rice Pilaf in boiling bags or package of Rice Pilaf, or prepare from recipe.

Bread and fry chicken breast until just done. Prepare cheese sauce and Rice Pilaf, set aside and keep warm.

CHEESE SAUCE: Melt butter in a saucepan. Stir in flour until well blended. Add milk slowly, stirring until sauce is smooth and slightly bubbly. Reduce heat. Add cheese, salt, pepper, paprika, and dry mustard. Stir until cheese is melted and sauce is well blended.

Place bed of Rice Pilaf in baking dish. Pour cheese sauce over rice. Top with chicken breast. Sprinkle grated cheese over chicken. Top each with a broccoli spear, a piece of bacon, and toasted almonds. Place dish in 350 degree oven 5 minutes or so, until cheese is melted. Serve immediately.
