COQUILLES ST JACQUES 
Butter
1 lb. scallops
2 shallots, chopped
Fresh parsley, chopped
2 tbsp. or more chopped chives
1/2 c. bread crumbs
Salt and pepper
Melted butter

Preheat oven to 400 degrees. Heat butter in pan. Add scallops and cook a few minutes on high heat. Add parsley shallots and chives. Season and cook few minutes. Mix and spoon into scallop shells (large scallop shells can be purchased in most stores with kitchen gadgets). Sprinkle with bread crumbs and moisten with melted butter. Cook 3 minutes in oven. Serve with lemon. Yields 4 servings.
