“GERMAN DUMPLINGS (FOR SOUP)” IS IN:

GERMAN DUMPLINGS (FOR SOUP) 
2 tbsp. butter
1 egg, slightly beaten
1 cup mashed potatoes
2 tbsp. grated cheese
1 tsp. salt
1/8 tsp. pepper
1/8 tsp. nutmeg
1/4 fine dry bread crumbs
2 cups boiling water plus 1/2 tsp. salt

Cream the butter with a spoon in a mixing bowl. Stir in the egg, potatoes, cheese, salt, pepper and nutmeg. Mix well. The mixture should form a thick paste.

Add the bread crumbs as needed to give it the consistency to be shaped into small balls. Drop balls into the boiling salted water.

Cover the pan and cook 8 to 10 minutes. Remove with a slotted spoon.

Serve these dumplings with any hot, thin soup.

Makes 10 small dumplings.
