LO CARB EASY SAUSAGE SPINACH SOUP | |
1 pound sausage roll (like Jimmy Dean's) spicy works well 64 oz. beef broth (2 2 lb. cartons or cans) 1 medium onion, coarsely chopped 1 large bag frozen chopped spinach (canned doesn't taste good) 2 cloves garlic minced 2 tbsp. chopped fresh basil salt and pepper, to taste Parmesan cheese Brown sausage over medium/high heat until fully browned. Drain to your liking. Leaving some of the pan drippings adds to the flavor. In a large stockpot add sausage and remaining drippings. Pour the beef stock over sausage and add onion and garlic. Add chopped basil. Let simmer for at least an hour, stirring occasionally. Add spinach 10-15 minutes before serving. Top with freshly ground pepper and Parmesan cheese for a great flavor.
