COCONUT FROSTING 
3 oz cream cheese, softened
3 tbsp unsalted butter, softened
1/3 cup confectioners sugar
3 tbsp well-stirred canned cream of coconut
1 teaspoon dark rum (optional)
1/3 cup sweetened flaked coconut

When purchasing the canned cream of coconut for this recipe, do not choose coconute milk, but instead choosing a product similar to Coco López.

Combine ingredients, beating well until icing consistency is achieved. Add more confectioners sugar, if needed.

I have no idea what Coco Lopez is like. Is it thicker or thinner? There are some coconut milks that are thick on top but runny on the bottom and when you stir it together it is runny. There are some that are thick like a custard and don't pour. Which is closest to the Coco Lopez?

Coconut cream (creme de cocao) is not coconut milk. It is a pure of the may and fat of the coconut sweetened with sugar. This recipe is excellent! I substituted 3/4-tsp dark tequila & 1/4-tsp of vanilla extract for the rum.

Coco Lopez, Goya, Celebes & DelightPlus are some good suppliers. Goya makes the best coconut milk and creme. It can be found in the 'Spanish' section of most supermarkets. This recipe is delicious and flexible.
