SPINACH QUICHE 
1 pkg. frozen chopped spinach
2 tsp. horseradish
4 oz. sour cream
1/4 c. shredded Cheddar cheese
1/4 c. shredded Swiss cheese
3 eggs
Nutmeg
Red pepper
Salt
3/4 c. milk or cream
1 1/2 tsp. flour
2 tbsp. melted butter
1 pie crust

Preheat oven to 375 degrees. Drain spinach; combine with sour cream, dash red pepper, dash of nutmeg, and horseradish (if mixture is watery, drain it). Place mixture in pie shell and sprinkle cheese mix over.

Beat eggs and milk or cream, flour, dash of red pepper, and dash of salt. Beat mixture at high speed until frothy. Pour mixture over cheese and spinach and place in oven (it is advisable to place pie plate shell on a cookie sheet and move cookie sheet into oven to keep spills from falling over).

Bake for 35-40 minutes or until a cake tester comes clean.
