“SAMMY'S #1 SALMON PATTIES” IS IN:

SAMMY'S #1 SALMON PATTIES 
1 (14 3/4 oz.) can salmon
1/2 med. onion, chopped
2 eggs
1 tsp. ground pepper
1 tsp. fresh lemon juice
1 whole pkg. saltine crackers, crushed

Empty 1 can salmon and juice into large mixing bowl (remove bones). Add 2 eggs. Add lemon juice. Stir mixture well. Add onion, pepper, crackers. Stir.

Form into patties 3/4 to 1-inch thick. Set aside on plate or wax paper (make 5-6 patties). Let set 5 minutes.

In large frying pan heat 1/2-inch cooking oil to med. high temperature. Do not skimp on oil. When oil is hot place patties in pan and cook 4-5 minutes per side. Make sure patties get cooked all way through. Center should not be cold.

Patties will be beautifully brown, crunchy, and very delicious. Squeeze on some fresh lemon. mmmmm... they are to die for!

Just a tip for crushing the crackers. There are lots of ways to do it, you can put them in a food processor but that could make them too fine. I take a pkg. of crackers and start whacking it with a knife sharpening steel until they are broken down to large crumbs. The I crunch it around in my hands a bit. Then I open the pkg. and add to the mixture. Works very well and crumbs are just the right size.

My favorite way to eat salmon! I like these with cocktail sauce when they're hot and ketchup on a bun when they're cold right out of the fridge. I wish you'd make them for me more often.

I added crackers and 2 cloves of garlic.. Made patties and rolled in yellow corn meal. I didn't add corn meal in the patties.. These were so good!

I've been making these for some time. They are great. Trying making some & put cheese sauce on them. I buy the cheese sauce on line from the states from Southwestern Mills. I can also find it on Ebay & Amazon. ENJOY!

A good friend told me to check out this recipe. My only change was a light sprinkle of Old Bay on each patty. These are beautiful, easy, and the best I ever made. I minced red onion very small, and I cooked them in 1/2 butter and 1/2 peanut oil, medium high, 4 minutes per side. They came out looking like a picture in a magazine! You get a lot out of one can of salmon, so this is a very inexpensive meal. Beautiful, frugal, tasty, and quick to make.

Exactly how my Mom made salmon patties! I occasionally add chopped-fine celery and a dash of Old Bay to this recipe. Just made salmon patties the other night and they were as good as always. This is a "never fail" recipe when followed exactly and if you make it enough, you won't have to look it up!

I've never measured the cups per pkg. of saltines. But it takes a whole pkg. to make perfect salmon patties.

People are getting hung up on the saltine "package". Stop calling the saltines a package. It is a sleeve of saltines from a box of crackers. This recipe sounds delicious I'm gonna try it.

Personally, I think this is way too many crackers, but I never thought about them making it crunchy when you fry them in a half inch of oil. I use the same ingredients, just less. also, I save the liquid from the can and add some with one egg. I might try yours one day for a change. Thanks.

Actually this the perfect amount of crackers. It really adds to the crunch and flavor which is what you want. I was taught this recipe from my bosses elderly mother and she knew exactly what she was doing. I used to make these for my boss about twice a week for a year and he would have it no other way and I agree with him. Cut down on the crackers and you have a lesser salmon patty.
