2 c. med. buckwheat groats 1 egg 5 tbsp. cooking oil 4 c. boiling water 2 tsp. salt 3 cans water 2 tbsp. chopped celery 1 tbsp. chopped parsley 1 med. onion, chopped fine and browned in cooking oil Salt and pepper 1 (10 1/2 oz.) can tomato soup Pick over the groats; put into a shallow pan. Add egg; mix very thoroughly. Dry mixture by placing in oven at 350 degrees, stirring frequently, until the kernels are separated, very dry and lightly browned. (Be careful not to scorch.) Put groats into a pot; add oil, salt, and boiling water. Bring to a brisk boil; cook until surface water is absorbed. Cover; bake at 375 degrees about 30 minutes. Add celery, parsley, onion, salt, and pepper; mix thoroughly. Fill cabbage leaves like you normally prepare for pigs in a blanket. Arrange in layers, salting each layer and covering with tomato soup mixed with water. Cover with cabbage leaves and bake at 350 degrees until cabbage is done. Serve with mushroom sauce. |
