SPINACH QUICHE | |
3 tbsp. olive oil, butter or vegetable oil (preference) 3 to 4 green onions, chopped 1 (10 oz.) bag spinach, fresh and chopped 1 cup milk 5 eggs salt and pepper, to taste 2 cups Colby jack cheese, shredded 1 carrot, shredded (optional) 1 lb. Canadian bacon, chopped large 1 box Pillsbury pie crusts (2 crusts) 4 Swiss cheese slices (optional) Add olive oil and green onions to deep sauce pan on medium heat. Cook about 2 minutes then add spinach to pan, cook until spinach is wilted and season with salt. Squeeze out all water in spinach over colander. Combine milk and eggs then whisk together with salt and pepper. Preheat oven to 400°F. Start layering ingredients in pie shell in no particular order. I do Colby cheese, spinach, carrot, Canadian bacon then repeat. After layering all ingredients pour milk and egg mixture slowly over pies. Cover baking sheet and both pies with foil. Add pies to baking sheet and bake for 45 minutes. Remove the foil from the tops of both pies and add Swiss cheese. Put both pies back in the oven for 15 minutes or until the tops are golden brown and pretty. Let pies cool a little while to set up before slicing. Enjoy! You can thank me later. Makes 2 pies.
