THREE RIVERS RICE | |
1 lg. onion, diced 1 stick butter 2 c. rice, uncooked 1/2 lb. Cheddar cheese, grated 2 (10 1/2 oz.) cans beef broth 1 (8 oz.) can sm. mushrooms with liquid 1 c. slivered almonds, toasted Saute onion in butter; add uncooked rice and simmer 5 minutes. Add remaining ingredients, reserving almonds; pour into a 2 1/2 quart casserole. Cover and bake 1 hour at 325 degrees. Stir in almonds before serving. Serves 8. |
