HOT ROAST BEEF SANDWICHES
1 lb. thinly sliced roast beef
1 can beef broth
1 whole onion, thinly sliced
3 cloves garlic, minced
1 small can sliced mushrooms
3 tablespoons Wondra flour
2 tablespoons ketchup
1/2 tsp. onion powder
1/4 tsp. garlic powder
1/4 tsp. each salt and pepper

In a medium saucepan, bring beef broth to a boil. Add onion and garlic powder, ketchup, minced garlic and sliced onion.

When broth comes to a rolling boil, drop in the separated sliced roast beef and remove immediately from heat. Using a slotted spoon, remove roast beef from broth after 2-3 minutes. Return broth to stove on high setting and sprinkle Wondra flour over surface, stirring briskly to avoid lumps.

Simmer over medium heat 5 minutes. At the last minute, drain the sliced mushrooms and add. Pour over roast beef on white bread or buttered and toasted buns or bulkie rolls. Top with thin slices of tomato or a few lettuce leaves, if desired. Season to taste with salt and pepper.

Serve.

This reminds me of a favorite sandwich shack we often visited on a Friday night. They served the best roast beef sandwiches around and this is so much like what I remember!

This is very easy to make. It's especially nice to make on a hot summer day - no using the oven and it's done within a half hour.

Did you ever eat at red wells in Toledo, Ohio? Great roast beef sandwiches.

I love this stuff over homemade white bread. It will always remind me of the local greasy spoon still in business after all these years, and my Dad's specialty growing up which was placing the oven-hot tray of roast beef and gravy on the table and peeling back the plastic film, served with Wonder Bread. An easy meal for a single Dad of 4 in the 80s!

I love this recipe. It's quick, tasty and easy during the pandemic. It can be hard with families home together more than they were pre pandemic and feel like I am always cooking.

What type cut is the beef or do get it from the deli?

 Jody (Nevada) replies:
You can use sliced leftovers from a roast beef dinner you had the night before or buy it fresh from the deli.
