EASY CROCK POT ROAST 
3 lb. chuck roast
1/2 can beef broth
1 c. flour
1/2 tsp. garlic powder
2-3 cloves garlic
1 onion, diced
3 or 4 carrots, peeled and cut in 1-inch pieces
2 tbsp. extra virgin olive oil
1 bay leaf
dash of salt and pepper

Wash chuck roast. Season generously with salt, pepper and garlic powder. Coat with flour.

Place floured roast into oiled skillet and brown lightly on both sides.

While browning roast, add diced onions to skillet.

Transfer roast and onions to greased crock-pot. Toss in whole garlic cloves, carrots and bay leaf.

Pour in 1/2 can beef broth over roast and add salt and pepper.

Cover and cook on low for 8 hours.

This is a wonderful, simple recipe. I tried it with a shoulder roast (no chuck roast was available to buy). It was good but when I cooked it with the chuck roast, the flavor was much better. In fact it was the best crock roast I ever made. I used beef consume instead of beef broth.

I did add 1 tsp. thyme, 1/2 c. 1/2 in cubes of carrots & 2 similarly chopped stalks of celery. It doesn't take much additional time & the flavor improves when there's not much connective tissue in the meat (like there is in shoulder or rump).

Just had this for dinner and it was soooo good, I did add a little Worcestershire sauce to the gravy at the start and it just gave it a bit of kick, delicious. Oh and the meat was so tender my one year 12 month old with 5 teeth could eat it no problem :)

This was amazing I made it last night for my dinner the only thing I had to use different was a small amount of garlic spread instead of cloves. The meat came out so moist and my family actually are the whole 3 pounds of meat! Usually roast gets wasted at my house!

I like the recipe but I wouldn't wash the roast first, it's not necessary as it's going to be fully cooked and can take away from the flavor of the meat.

I completely agree. What is the purpose of washing meat? I mean anything that MIGHT be on it (doubtful, now days) would certainly be killed off during cooking. I've never washed meat prior to preparation and I'm 74 this year...

Best roast i have ever had. Tender and flavorful. I ommitted the garlic cloves but, added one cut up slice of bacon, and julienned carrots 45 minutes before serving. The bacon really mixed well and gave it a rich flavor. Definitely going to make this one again.
