1 1/2 c. cooked, mashed eggplant
1/4 c. chopped onion
1 egg
1 c. Bisquick
1/4 c. milk

Mix all ingredients together. Drop by spoonful into hot oil and fry until golden brown. Serve hot. Enjoy!
