JELLO PUDDING COOKIES 
3/4 c. Bisquick flour
1 pkg. instant pudding
1/4 c. cooking oil
1 egg

Put in bowl and beat well. Roll in small balls. Flatten on cookie sheet; add nuts. Bake 8 minutes at 350 degrees.

These cookies are WONDERFUL. I made mini-cookies for a larger quantity but the bigger cookies were definitely chewier. Next I'm going to double the recipe and make larger ones. I'm using "Vanilla with chocolate chips" pudding mix. I also used Bisquick Healthy Heart instead of regular.

Very tasty. I made these one night before we moved (almost everything had been packed except our cupboards). I doubled the recipe and made it with a box of vanilla and a box of chocolate pudding. They are very oily when you roll them into balls, but very cake-like after they're baked. Thanks for the recipe!

I used to make these all the time, but lost the recipe a long time ago. I'm glad I found it. I roll the dough into small balls and press flat with the bottom of a glass dipped in sugar. Lightly grease the bottom of the glass first. Try pistacchio pudding and red sugar for Christmas.

I remember this recipe, except that my recipe says to use 1 Cup Bisquick Flour and also to use a Cookie Press Gun for this. The cookies are smaller, but you will get more cookies and they will have a design to them. Good-Luck!

I've used this recipe successfully for years with pistachio pudding. Rolled in sugar flattened and baked with a sliver of pistachio on top. My only complaint is it only makes about 15 to 20 cookies per box of pudding.
