PINEAPPLE UPSIDE DOWN CAKE (CAST
IRON SKILLET)
 
1 box yellow cake mix
1 cup brown sugar
3 eggs
1 stick butter
1 can pineapple (slices, rings, pieces.)
save pineapple juice add water to get 1 1/2 cups

This is made on the stove top!!

Mix 3 eggs in with the cake mix in a bowl. Add pineapple and water juice mix. Melt butter in a cast iron skillet. Reduce heat to low.

Sprinkle 1 cup of brown sugar over the butter. Place pineapple on top of brown sugar. Spoon in cake mix over top of pineapple.

Cover cast iron skillet and let cook on low heat for about 20-25 min, or until mixture has the consistency of cake.

Let cool, turn upside down and cake will fall out.

My sister & I make this cake and use the pineapple rings and we place a red cherry in the middle of the rings. Cake comes out everytime and is so pretty!!!!

I'm going to guess a 12-inch because I just made it in my 10-inch and despite filling it nearly to the rim, there was enough batter left over to make 2 "jumbo" (that's the muffin tin size I have for jumbo cupcakes) cupcakes. Also, 25 minutes on the stove in a covered 10-inch CI skillet was nowhere near enough time and it was still just hot batter. I moved it to my countertop oven and it finished in about 20 min. I'm guessing in a 12-inch it would have a chance to cook through on the stove.

Glad to find this recipe that was in a book that came with my mom's wood stove (that I lost). I will add the pecans with the brown sugar as I did when I made this, years ago. Might want to try this. Scrumptious!
