BUTTER HERB BAKED FISH 
1/2 c. sweet butter
2/3 c. crushed saltine crackers
1/4 c. Parmesan cheese
1/2 tsp. basil leaves
1/2 tsp. oregano leaves
1/2 tsp. salt
1/4 tsp. garlic powder
1 lb. fish fillets (sole, perch)

In 9"x13" baking pan melt butter in preheated oven 5 to 7 minutes. In a pie pan combine cracker crumbs and spices; mix together. Dip fish in butter and then in crumb mixture. Arrange fish in baking pan, bake near center of oven for 25 to 30 minutes at 350 degrees. Bake fish until tender enough to flake with a fork. Serve immediately.
