“BLUEBERRY BANANA BREAD” IS IN:

BLUEBERRY BANANA BREAD 
1/2 cup (1 stick) butter, softened
1 tsp. vanilla
1 tsp. baking soda
2 large ripe bananas, mashed
1/2 cup chopped nuts (optional)
1 cup sugar
2 eggs
1 1/2 cups flour
1/2 tsp. salt
1 1/2 cups blueberries, fresh or frozen

Preheat oven to 325°F degrees.

Grease and flour 2 loaf pans. Cream together butter and sugar. Beat in eggs. Add mashed bananas.

Measure flour, reserving 2 tablespoons of flour to coat blueberries.

Stir baking soda and salt into flour, mixing well. Fold into banana mixture. Stir in vanilla.

Sprinkle the 2 tablespoons flour over blueberries, then fold into batter. Stir in chopped nuts.

Transfer batter to loaf pans.

Bake for about 50 minutes.

Great recipe. I did change a few things. Instead of a cup of sugar I added about 3/4 c. white sugar and 1/4 c. brown sugar. And I added about 2 c. of blueberries instead of the 1 1/2 c. Very, very good!

This was great! I didn't change the recipe at all, and it turned out super moist and delicious! Now, I used only one loaf pan, so I had to increase my baking time to about 1 hr 10 mins...there was a little bit of batter left over. I may try this in a 8" x 8" pan next time so I can use all the batter! The whole family has enjoyed it!

I've made banana breads from several recipes and this was by FAR the best. I used whole wheat flour and it was so moist and delicious. Other than that I followed the recipe exactly. My family loved it, it's been added to the recipe book. Can't wait to let some bananas go "bad" so I can make it again!

We REALLY enjoyed the outcome of this recipe. I decreased the sugar to 3/4 cup and sprinkled granola on top before baking - and I also added nor blueberries than the recipe calls for. The bread was extremely moist and very flavorful. We will definitely make this one again! Thank you for the recipe! Yum!!
