HEALTHY CHICKEN MEATBALLS 
MEATBALLS:

2 chicken breasts (boneless, skinless)
1/2 cup seasoned bread crumbs (Progresso or 4C)
2 tbsp. milk
1 tsp. oregano or Italian seasoning
1 tsp. crushed red pepper flakes (optional)
salt and pepper, to taste

SAUCE:

1 (24 oz.) jar marinara sauce

Preheat oven to 400°F.

Grind thawed (if frozen) chicken breasts in food processor. Add bread crumbs, milk and spices. Blend until well mixed with ground chicken.

Use hands to form chicken mixture into 1-inch balls. Place on greased cookie sheet and bake at 400°F for 15 minutes (or until cooked through).

While baking, heat sauce on stove top. When meatballs are cooked, add them to sauce and simmer for 15 minutes.

Serve over pasta or as meatball subs with cheese, onions and peppers!
