GRAM'S CARROT CAKE 
This recipe was given to me by my grandma, Helen Haas, who lived to the ripe old age of 102, so it must be a healthy thing to eat. It's a favorite of my husband's, and we always top it with green-dyed coconut "grass" and a few clusters of jelly beans for Easter.

2 cups sugar
4 eggs
1 1/3 cups oil
2 cups all-purpose flour
2 tsp. baking soda
2 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
4 cups grated carrots
3/4 cup chopped nuts
1/2 cup (1 stick) butter
1 (8 oz.) pkg. Philadelphia cream cheese
2 cups powdered sugar
1 tsp. vanilla

Preheat oven to 350°F.

For cake, combine sugar, eggs, oil, flour, baking soda, baking powder, salt, cinnamon, grated carrots, and chopped nuts. Pour into 13x9-inch greased pan and bake for 40 minutes or until cake tests done.

For frosting, blend butter and cream cheese, and then add powdered sugar and vanilla. Frost, and see if it lasts long enough for you to have a piece yourself.

OMGOODNESS!!!!!! This cake recipe rocks..... My Husband can't get enough I have tried sooooooooooooooooo many recipes and this is his favorite and your right I never get a piece of it maybe the scraps that are leftover. This has become a family recipe for us as well at least twice a week in our home as well as extended family as I type this I am working on two for actual cake orders.....KUDOS to Helen Hass!!!!! This is the best recipe I have made in a long time. I divided the cake into 4 round pans for layers and I tripled the icing ingredients to have enough for the layers and sides. I decorated it with green colored coconut and jelly beans for Easter. It was spectacular!

Best ever carrot cake. Backed off the frosting to 1 1/2 cups of powdered sugar and still great. One time in a pinch I used sweet potato rather than carrots and it was still very good.

My family loves this carrot cake. Aside from my grandsons 1st birthday cake I make carrot cake muffins. He is now 17 and it is still his favorite. I do tweak the recipe in some ways(3 layers, double carrots, etc.). This year the Christmas carrot cake will be made by mostly him. Fabulous!
