“IMPOSSIBLE MEXICAN PIE” IS IN:

IMPOSSIBLE MEXICAN PIE 
1 lb. ground beef
1/2 cup chopped onion
3 cloves garlic, minced
1 env. (1 1/4 oz.) taco seasoning mix
1 cup Cheddar Cheese, shredded (about 4 oz.)
1/2 can mild green chiles, drained, chopped and seeded
1 1/4 cups milk
3/4 cup baking mix (Bisquick)
3 eggs
1 tsp. hot sauce

Heat oven to 400°F. Lightly grease 10-inch pie plate.

In a hot skillet, brown and stir ground beef, onion and garlic; drain. Stir in seasoning mix. Spread beef mixture in a pie dish. Sprinkle with chilies and cheese.

Beat remaining ingredients until smooth and pour into pie plate.

Bake until golden brown and a knife inserted halfway between center and edge comes out clean, about 25 to 30 minutes.

Allow to stand at room temperature for 5 minutes before cutting. Garnish with extra peppers and shredded cheese, if desired.

I have made this for years -- it was first printed on the Bisquick box! It is a favorite -- we serve it like a taco with lettuce, tomatoes, diced onions sour cream and picante' sauce. Quick & easy!

Love this... a big winner with the hubby. I don't add garlic or chilies. I serve with black bean and corn salsa and a side salad with tomatoes,olives and onions.
