FRIED PEANUT BUTTER BANANA SANDWICH | |
This is not Elvis's chef's recipe for the sandwich. Neither is this the Food Network's healthier version. This is a variation intended to provided the butter rich taste of the original version without having to sacrifice an entire stick of butter for just one sandwich. 1 ripe banana, sliced on the diagonal into eight or nine pieces. 1 tbsp. unsalted butter 1 tbsp. ghee 2 slices sandwich bread (butter crust highly recommended) 1 tbsp. peanut butter divided, give or take a teaspoon according to how gooey you want your sandwich. Use any variety you want as long as it will spread evenly on the bread. Melt the butter in a skillet over medium heat, then arrange the slices of banana in the melted butter. Fry the slices for approximately three minutes per side, to get a nice browning on the bananas. The butter will start to brown too, and this is fine. While the bananas are frying, spread the peanut butter on your bread slices. You want an even layer that will be capable of sticking to the fried banana slices. Once the bananas are browned, remove them from the pan onto a paper towel for a brief drain and to let them cool just enough so you can handle them. Add the ghee to the pan and loosen the browned butter with your spatula. The ghee has a higher smoke point, so this will prevent the butter from burning while you fry the bread. Arrange the freshly fried banana slices on a peanut buttered slice of bread, and close the sandwich with the other peanut buttered slice. Then fry the sandwich in the greased pan until both sides of the bread are browned. Cut the sandwich in half and serve with your choice of beverage and sides. Submitted by: Elph |
