SPICY QUINOA AND RICE STIR FRY 
1 cup black rice
1 cup quinoa
3 cups water
2 Tsp olive oil
1/2 onion dices
large green bell pepper, diced
large orange or red bell pepper, diced
1 or more medium heat peppers, diced
1 can of corn, drained
1 pound bulk hot Italian sausage (we use rabbit sausage)
1 bunch greens, torn (kale, mustard, turnip, even spinach)
1 Tsp chili powder (more or less, to preference)
2 Tsp soy sauce.

Add rice and 2 cups of water and set the controls for white rice, set timer for 10 minutes, stir in 1 cup of water and quinoa and cook till the cooker clicks to stay warm. In a large skillet, heat the oil. Brown sausage, saute the vegetables till slightly soft. Stir in the chili powder, soy sauce and grain mixture into the skillet. Mix well and serve with warm bread, tortillas, or chips.

This is an easy one bowl dinner, makes 6 to 8 servings, depending appetite and side dishes. Switch beans the sausage for a vegan twist. Control the heat by varying the amount of chili powder or the heat of the peppers. Brown rice can be substituted for the black rice.
