1 lb. ground turkey or lean beef (I use ground turkey)
1 med. onion, chopped (more, optional)
1/2 tsp. salt
1/4 tsp. pepper
3/4 c. Bisquick baking mix
1 1/2 c. milk
3 eggs
2 tomatoes, sliced
1 c. shredded sharp Cheddar cheese

Heat oven to 400 degrees. Grease pie plate 10 x 1 1/2 inch.

Cook and stir ground turkey or beef and onion in skillet until brown. Drain, if necessary. Stir in salt and pepper. Spread in plate.

Beat Bisquick, milk and eggs with wire whisk or hand beater until almost smooth, about 1 minute. Pour into plate over meat. Bake 25 minutes.

Top with tomatoes and cheese and bake until knife inserted in center comes out clean (5-8 minutes). Cool 5 minutes. Garnish around edge with lettuce if desired. 6 servings.
