DEEP FRY FISH BATTER 
1 tbsp. vinegar
1/2 c. water
1/2 c. milk
1 c. all-purpose flour
1 tbsp. baking powder
1/2 tsp. salt (I don't use this much)
Fish fillets, thawed (flounder or perch)

Great for shrimp also. Combine first 6 ingredients, beat until smooth. Dip fish in batter. Fry in deep fat until golden brown, turning once. If other types of fish are used, omit the salt.

It came out good but my batter was super pasty- I had to kinda smear/paint it on the fish is this normal? I was tempted add more liquid but just went with it. Like I said it did come out good - I grated fresh parm on top each fillet and sprinkled some minced oregano and basil (fresh) too....

Best batter I have tried yet. This is a keeper. So light and crunchy. Batter stayed on the fish perfectly and browned up just right. Can't wait to try it again. I think it must have something to do with the vinegar.
