“HASH BROWN CASSEROLE” IS IN:

HASH BROWN CASSEROLE 
1 cup onion, diced
1/2 cup (1 stick) butter, thinly sliced
1 (8 oz.) container sour cream or plain yogurt (optional)
1 (8 oz.) pkg. Kraft Cracker Barrel sharp cheese
1 can Cream of Chicken soup
1 (2 lb.) bag frozen hash brown potatoes, thawed
1/2 to 1 cup potato chips or corn flakes

Stir together well the diced onion, sour cream or yogurt, grated cheese, thinly sliced butter, and Cream of Chicken soup. Add the hash browns and mix well.

Spread this mixture evenly in a casserole dish and top with crushed chips or corn flakes.

Bake at 350°F for 1 to 1 1/2 hours.

Makes 8 to 12 servings.

Extra good using crushed Ritz crackers with a bit of melted margarine on top instead of corn flakes or chips. Also very tasty with chopped cooked ham added. Serve with Pineapple chunks or slices for a simple but good meal.

Shirley, you're right about Ritz crackers & dab melted butter, and ham. Made first time w/them, DE-LICIOUS!! Also, just use a good brand of cheese.

I made this twice. The first was as given in the recipe except I used medium cheddar cheese and I was not pleased. Tried it again with store bought fresh uncooked hash browns and used sharp cheese. What a difference, so yummy.

I used pepperjack cheese, cream of mushroom soup, and Italian breadcrumbs on top. (Only because I did not have all the listed ingredients!) It turned out very tasty for a little change on a traditional favorite. Thank you for your recipe!

Delicious! I use the ingredients listed above, but I do not add the crushed chips until about 5-10 mins left at the end. I generally don't measure the onions, I just buy a bag of frozen chopped onions and throw most of them in. I also usually add a little extra cheese on top before adding the chips. The recipe always turns out consistently good and people seem to enjoy it. It is definitely my go-to cheesy hashbrown recipe! Thanks for sharing the recipe!,
