GREEK HOLIDAY BREAD
1 lb. butter
12 eggs
3 c. sugar
4 yeast cakes
Flour as needed
1 tsp. baking powder
3 potatoes, boiled
1 c. milk
1 c. cinnamon water (made by boiling 1 c. water with 2 cinnamon sticks 5 min.)

Mix butter and sugar well, then add beaten eggs, blending thoroughly. Dissolve yeast in milk and add to first mixture, then add potatoes which have been mashed well. Mix thoroughly and begin adding flour until dough which can be easily handled is formed.

Knead for a few minutes until smooth. Place in greased baking pan, cover and allow to rise in warm place until double in size. Brush top with beaten egg yolk. Garnish with walnuts or Easter eggs, according to the season.

Bake in oven 350 degrees for 1 hour. Four medium size loaves may be made from this recipe.

This holiday bread is a favorite in the Greek household at Christmas time, when walnuts are used as decorations and at Easter time when bright red eggs are placed in the dough and baked with the bread. Tiny loaves may be made for the children of the family, decorating them with one egg or a few walnuts.
