ENCHILADA PIE | |
1 lb. ground beef 1 med. onion, chopped 1 clove garlic, minced 2 tbsp. shortening (oil) 1 tsp. salt 1/2 tsp. pepper 1 tbsp. chili powder 1 can olives, chopped 1 (8 oz.) can tomato sauce 1/2 doz. corn tortillas, buttered 2 c. Cheddar cheese, shredded 2/3 c. water Saute ground beef, onion and garlic in oil. Stir in seasonings, olives and tomato sauce. Alternate layers, tortillas, meat-sauce and 1 1/2 cups cheese. Sprinkle remaining cheese on top tortilla. Pour water at edge into bottom of casserole. Bake at 400 degrees for 40 minutes. |
