ALICE'S LOW-CARB CAULIFLOWER
CASSEROLE
 
1 head cauliflower
1 cup diced onion
6 slices bacon, cut up small
1 cup grated Cheddar cheese
4 tbsp. (1/2 stick) butter (no sub!)

Steam cauliflower till soft, then mash and add butter. Sauté onion and bacon until bacon is cooked and onions are soft. Add onion, bacon and cheese, mix.

Put in oven safe casserole dish and bake at 350°F for approximately 20 minutes, or till bubbly and brown.
