CROCK POT CARNITAS 
2 to 4 lb. pork butt roast
4 garlic cloves
1 fresh jalapeno pepper
1 bunch fresh cilantro
1 lg. can lite beer
Corn tortillas (without lard)

Insert garlic cloves in roast; place in crock pot with whole pepper and half bunch of cilantro which has been chopped. Season to taste. Pour in beer. Cook on high 4 to 6 hours until fork tender. Remove meat; shred. Serve in steamed tortillas with tomatoes, onions, cheese and cilantro. Great with refried beans and Cabbage Salad.

Around here a large beer is usually 16 oz. It says lite beer. Why wouldn't miller lite be ok? do you want a brand too or an egg in your beer? (just kidding). But really, don't you think this is being a bit too picky?

This recipe was amazing! It was so so so easy and made Carnitas just like we love them. My family is Mexican, so I wasn't expecting such an easy recipe to make them taste so good! My husband ate three plates. I used a 12 oz can Miller Lite and it was perfect. Also, I cooked it for about 5 hours and 15 minutes.

I've made this recipe about 10 times over the years. For the simplicity and taste, it's 5 stars. Definitely use a mexican beer, preferably a 24 oz. bottle of Corona or Dos Equis. Cook closer to the 6 hours than the 4. Also make a pico that consists of fresh cilantro, diced onion, and fresh lime juice. Serve on corn tortillas w/ mexican white cheese and it's pretty tasty. Miller lite is not beer. That is water. Put 12 oz of a beer with flavor like sierra nevada or negro modelo. Its not rocket surgery.

Simple and exactly right. Could the details be better? Sure, if you like a very wordy recipe. But the point is, roasting/poaching low and slow makes a delicious, tender piece of meat.
