ZUCCHINI AND YELLOW SQUASH
CASSEROLE
 
3-4 med. zucchini
3-4 med. yellow squash
1 med. onion
1 tbsp. butter
1 c. shredded Mozzarella cheese
1 c. crushed Triscuits
Salt and pepper to taste
2 eggs

Slice zucchini, yellow squash, and onion. Steam until tender in butter. Beat 2 eggs. Combine all ingredients except Triscuits in greased casserole. Top with Triscuits. Bake at 350 degrees for 30 minutes.

I made this tonight. My kids are gluten and dairy free, so i just sub'd butter for margarine, and the triskets with gluten free bread crumbs, and the cheese with sliced diary free cheese.... it was good. we all ate it.
