CROCK POT CHICKEN & RICE
CASSEROLE
 
4 lg. chicken breasts
1 sm. can cream of chicken soup
1 sm. can cream of celery soup
1 sm. can cream of mushroom soup
1/2 c. diced celery
1 c. minute rice

Mix in crock pot the 3 cans of soup and rice. Place the chicken on top of the mixture, then add the diced celery. Cook for 3 hours on high or 4 hours on low. Makes 4 servings.

More rice, about 1/2 cup and 2 other pieces of chicken breast, makes 6 servings.

Great recipe, simple enough for a non-cook like me to handle..Haha. I did the 2 extra pieces of chicken, but added another full cup of rice and one more can of cream of chicken, worked like a charm.

Got beans on the brain? Add some fiber by tossing in 1 (or 2 cans if you REALLY like beans) can of black beans, red (dark or light) kidney beans, or Northern white beans. Go crazy and add 1/3 of a can of all three, or 1/2 can of 2 different beans.

If you have uncooked beans, put them in a pot with 2 inches more of water than would just cover them, bring to boil then reduce heat and cover and cook 10-15 more minutes. Drain. Follow the recipes and enjoy!
