CHICKEN MEAT LOAF 
1 lb. ground chicken (may use turkey)
1/4 c. catsup
1 sm. onion, chopped
1/4 c. seasoned bread crumbs
1 tsp. poultry seasoning
Approximately 1/4 c. skim milk
1 egg

Mix the above together and shape into a loaf. Bake at 350 degrees for 40 minutes; remove from oven and spread sauce over it.

NOTE: If too much grease has accumulated; some ground poultry has more fat content than others, spoon off excess before adding sauce.

SAUCE:

1/4 c. catsup
3 tbsp. brown sugar
1 tsp. dry mustard
1/4 tsp. nutmeg

Return to oven and bake for an additional 20 minutes.

I made the sauce and loved it!! Haven't made the chicken meatloaf yet but I do have ground chicken in my freezer and was checking out my meal options. I'll come back to make this in a few days, but that sauce!!! It's great. I had made a turkey meatloaf and put it on that instead.
