CANDIED CARROTS 
3 cups carrots, rinsed and cut into 1" pieces
1 cup water
1/4 cup brown sugar
6 tbsp. butter
2 tsp. vanilla
1 tsp. cinnamon
1/2 tsp. nutmeg

Combine carrots and water. Cook for 25 minutes; drain. Add brown sugar, butter, and vanilla. Mix well. Stir in spices. Cook until syrup is bubbly, and sugar is dissolved.
