CILANTRO & LEMON CHICKEN GRILL 
Great over a salad of mixed greens for summer dinning!

5 lb. boneless, skinless chicken meat (breast, thighs, legs)

MARINADE:

15 garlic cloves, crushed
juice of 2 lemons
bunch of cilantro, chopped (about 1 cup)
1 red onion, chopped
1 tbsp. Kosher salt
1/2 tsp. black pepper
3/4 cup olive oil

Mix all marinade ingredients together in a bowl. Wash chicken pieces and pat dry with a paper towel. Place chicken in gallon size Ziploc style bag. Pour marinade over chicken. Remove as much air as possible before sealing bag. Move chicken around in bag to evenly distribute marinade. Place bag into a bowl and put into refrigerator overnight. Marinate 24 hours or more.

Note: The longer the marinade time is, thee better. Move around a few times through the night and next day.

Heat up you BBQ grill or you can broil this chicken. Broiling about 7 minutes on each side. BBQ depends on hot your grill is. I cook mine on the darker side. I enjoy the blackened flavor. It depends on if you are cooking boneless dark meat or boneless breast meat. Breasts cook very quickly. Cook until juices run clear.

Variation: If you want it spicy, add chopped jalapenos or your favorite chopped hot peppers to the marinade.
