LEFTOVER CHICKEN OR STEAK FAJITAS | |
4 c. precooked chicken or beef, cut up 1/3 c. lime juice 1 clove garlic, cut in sm. pieces 1/2 tsp. pepper 8 flour tortillas, warmed 2 c. shredded lettuce 2 c. chopped tomatoes 1/2 c. sliced onion 1/2 c. shredded cheese 1/2 tsp. garlic salt Place meat in a plastic bag or place flat on the bottom of a pan. Sprinkle with lime juice, garlic, salt and pepper. Tie bag securely or cover pan tightly and marinate in refrigerator 6-8 hours. Drain, discard marinade. To serve cold: Place equal amounts of meat, lettuce, tomatoes, onions and cheese on each tortilla. To serve hot: Broil heat, onion, garlic and tomatoes in a heavy non-stick pan 5-7 minutes at medium high heat, turning occasionally. Serve on lettuce and top with cheese. |
