EASY AND CHEAP MEXICAN CHEESE

I use this recipe often around Christmas. It is cheap, easy, and I never have any leftovers!

2 (8 oz. ea.) pkgs. cream cheese (the stuff in the foil, not the spread)
2 tbsp. taco seasoning
1 (10 oz.) can Rotel tomatoes, drained well
1 (8 oz.) pkg. shredded cheese (Fiesta or Mexican style)
Ritz crackers

In a large bowl combine both cream cheeses and taco seasoning. Before you add the Rotel make sure that all the liquid is out (this is very important, if any juice is left it will make cheese ball soggy). Add drained Rotel. Mix together well. Shape into ball.

On a large plate, spread shredded cheese and roll cheese ball in plate until it is completely covered with shredded cheese.

Transfer cheese ball to clean serving plate and surround ball with Ritz crackers.

Will try this for Christmas. Idea from TV. Turn your cheese ball into a Christmas tree. Shape ball into a tree form. Roll in diced parsley & dill. Decorate with Pomegranate seeds... The tree they did - was surrounded by Ritz crackers - and looked fantastic! Can't wait to try your recipe. Please submit any others you might have.
