APPLE BLUEBERRY MUFFINS | |
2 cups all-purpose flour 1 1/2 tsp. baking powder 2/3 cup white sugar 1/4 cup brown sugar 1/4 cup milk 1 egg 1/2 cup (1 stick) butter, melted 1 cup frozen blueberries 2 apples Heat oven to 375°F. Grease a 12 muffin pan or line with cupcake liners and set aside. In a medium bowl, mix together flour and baking powder. Set aside. Place sugars in a large bowl. Add milk. Add egg and mix until smooth. Stir in melted butter. Mix well. Add flour and baking powder. Beat until smooth. Peel apples and cut into 1/2-inch cubes, Add to batter with frozen blueberries. Fill muffin tins right to the top. Bake at 375°F for 20 minutes or until toothpick inserted in center comes out clean. Makes 12 Muffins Submitted by: Cleanfreshcuisine |
