SWEET POTATO MUFFINS 
1 stick butter
1 1/4 c. sugar
2 eggs
1 1/4 c. mashed sweet potatoes
1 1/2 c. plain flour
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. salt
1 c. milk
1/2 c. chopped raisins
1/2 c. chopped pecans

Cream butter and sugar. Add eggs, then sweet potatoes. Sift dry ingredients and add to sweet potato mixture alternately with milk. Do not overmix! Fold in raisins and nuts. Bake at 400 degrees in well greased muffin tins for 25 minutes.

Yield: 12 large muffins or 24 to 36 medium or small muffins.
