SHEPHERD'S PIE 
2 lb. ground beef
1 large yellow onion, chopped
1 (4 oz.) can sliced mushrooms, drained
1 (23 oz.) can vegetable beef soup (family size)
1 (10 oz.) can cheddar soup
2 (4 oz. ea.) pkgs. roasted garlic mashed potatoes (prepared)
1 (8 oz.) pkg. shredded cheddar cheese

Cook ground beef, onions and mushrooms in a large fry pan, drain.

Mix together soups and ground beef mixture in a 10x13-inch pan. Sprinkle EXTRA cheese if desired. Then layer the prepared mashed potatoes and sprinkle the cheese.

Bake at 350°F for 40 minutes. Let cool for 15 minutes before serving.

Note: For additional flavor and to also help prevent overflow you may sprinkle the inside edge of the pan with Parmesan cheese before adding the potatoes.
