BROCCOLI BEAN TOMATO PASTA
This is excellent on days when you're feeling a bit of the flu or a cold and need a bit of comfort and healthy boost at the same time.

medium shell pasta (as desired; I prefer less pasta to veggie ratio)
1 (15 oz.) can diced tomatoes with mushrooms
1 (15 oz.) can kidney beans
2 or 3 cloves garlic
1 (10 oz.) box frozen broccoli
dash of olive oil
salt and pepper, to taste
Parmesan cheese, for garnish (optional)

Cook pasta per box instructions - this will be the longest amount of time needed in preparation. In fact, if desired, while draining pasta heat other ingredients - this only takes a few minutes.

Heat diced tomatoes, kidney beans, and garlic in a little olive oil. Stir to coat and heat throughout. Heat broccoli in microwave, drain well, add to tomatoes and kidney beans. Stir pasta back into pot and add salt and pepper to taste. Sprinkle with a little (or a lot) of Parmesan cheese, if desired.

Enjoy!

Since microwave ovens vary in power, you may need to adjust your cooking time.
