CHOCOLATE CARAMELS | |
1 c. sugar 2 1/2 squares semi-sweet chocolate 1 1/2 c. whipping cream 3/4 c. corn syrup 1/4 tsp. salt 1/2 c. nuts 1/2 tsp. vanilla Stir together in heavy bottom pan over quick heat the first 4 ingredients and 1/2 cup cream slowly to soft ball stage. Add 1/2 cup cream and again cook to soft ball stage, then add the final 1/2 cup cream and cook to firm ball stage. Remove from fire and stir in nuts and vanilla slowly before pouring into lightly oiled pan. When candy is cold cut in squares with kitchen shears. Wrap each piece in wax paper. Cuts easiest at room temperature. |
