LEMON POPPY SEED MUFFINS 
1/2 c. butter
1 c. white sugar
2 eggs
1/2 c. milk
1/4 c. poppy seeds
1 1/2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1 grated lemon rind

In large bowl mix flour, baking powder, salt and lemon rind. Cream butter, sugar, and 1 egg. Beat in second egg. Blend in milk. Pour flour mixture over batter. Add poppy seeds. Stir only to moisten. Fill greased muffin tins 3/4 full. Bake at 375°F for 30 to 35 minutes.

These were actually the best lemon-poppyseed muffins I've been able to make....so far. The muffins came out great: a crusty, nutty top and a moist but firm texture inside. My wife says they're the best she's ever had.
