SPLIT PEA WITH HAM SOUP 
2 pkgs. split peas
1 ham hock with bone
Ham, cooked & cubed
Potatoes, cubed
Carrots, cubed
Celery, cubed
Onion, cubed
Salt & pepper

Put peas, ham bone, onion and celery in pot and boil for 1 to 1 1/2 hours (soup thickens as it cooks). Add ham and potatoes and cook until potatoes are soft. Season with salt, pepper and garlic. Very good left over and freezes well.

I have used this very recipe and I have to say it was the best one by far out there. Putting in the potatoes was a very good ideal, it not only makes the soup thicker but it also gives it a more creamer density. The only change I made to this recipe is I changed the cooking time, I used a very slow simmer and cooked for 2 1/2 hours.
