FRITTA (ITALIAN VEGETABLE
FRITTERS)
 
4 eggs, beaten
1/2 c. flour
1/2 c. milk
1 tsp. baking powder
1 - 1 1/2 tsp. salt
10 oz. bag frozen French green beans, thawed
10 oz. grated zucchini
1 med. onion, chopped finely

Beat eggs, flour, milk, salt and baking powder until smooth. Add beans, zucchini and onion. Hat 1/2 inch oil in bottom of frying pan on medium heat. Drop heaping tablespoons of batter into hot oil. Cook until brown. Turn over and brown second side. This makes a lot of fritta. Smaller families may want to use only 1/2 of a recipe.
