BEEF ENCHILADAS WITH CHEESE 
1 lb. ground beef
1 tsp. Lawry's seasoning salt
10 to 12 ox. Cheddar or Monterey Jack cheese
8 corn tortillas
1 sm. can enchiladas sauce or can of chili con carne, or both

Brown groung beef with seasoning salt until crumbly. Drain and cool. Combine 1 1/2 cups cheese with meat. Pour 1 cup sauce in 8 by 12 baking dish. Dip each tortilla into remaining sauce. Place 1/2 cup beef mixture in center of each tortilla. Fold or roll up and place in dish, seam side down. Pour remaining sauce on top and sprinkle with remaining cheese. Bake at 350 for about 20 minutes.
