ERIN'S BAKED ZITI ITALIAN SAUSAGE CASSEROLE | |
1 (16 oz.) pkg. Ziti or tube pasta 1 (16 oz.) pkg. sweet Italian sausage 2 eggs 1/4 cup freshly grated Parmesan cheese 1 (16 oz.) pkg. shredded Mozzarella cheese 1 (24 oz.) can traditional spaghetti sauce, divided (Hunts) 1/2 small onion 1/2 green pepper 1 clove garlic 1 tsp. salt 1 tsp. black pepper 2 tsp. olive oil Cook the Ziti per package directions; Drain the Ziti; add the Ziti back into the pot. Beat 2 eggs and 1/4 cup of fresh Parmesan cheese, salt and black pepper all in a bowl. Add this mixture to the Ziti in the pot and mix together. Add 1/2 can of spaghetti sauce and stir again. To cook sausages: Add olive oil to frying pan, cut up green pepper, onion and garlic. Sauté with the sausages. Once this is cooked drain the grease and cut the sausages into 1-inch pieces. Pour the Ziti mixture into a casserole dish. Add the sausage mix to the dish and stir in. Add the remaining sauce on top. Finally, sprinkle shredded Mozzarella over the Ziti and sausage mixture.
