CROWN PORK ROAST WITH ESCALLOPED
PINEAPPLE
 
Crown of pork
1 1/2 tbsp. salt
1 tbsp. pepper
Cubes of salt pork

Have crown of pork prepared by your butcher. Rub salt and pepper into meat. Cover tip of each bone with a cube of salt pork. Roast in a moderate 350 degree oven, allowing 30 minutes per pound.

To serve, replace salt pork with paper frills and fill center of crown with escalloped pineapple.

ESCALLOPED PINEAPPLE:

1 (23 oz.) can sweetened crushed pineapple, including juice
1/4 c. water
1/2 c. sugar
2 tbsp. cornstarch

Mix above together, then add 2 eggs, beaten. Sprinkle with cinnamon, dot with butter and bake at 350 degrees for 1 1/2 hours. Be sure to grease casserole generously. Recipe makes 4 generous servings.
