ORANGE JELLO COTTAGE CHEESE
DESSERT
 
1 can mandarin oranges
1 med. can crushed pineapple, very well drained
2 c. Cottage cheese
1 lg. size pkg. orange Jello (I use sugar free)
1 container Cool Whip (or 2 c. Dream Whip)

Place first 3 ingredients in large bowl. Sprinkle Jello over all and mix well. Fold in 1 container Cool Whip or 2 cups Dream Whip. Refrigerate. Quick and easy and DELICIOUS! (Note: I usually cut oranges in half. Recipe can be doubled.)

My Grandmother has been making this dessert for as long as I can remember and she calls it Quick Salad. My sister has taken over making it and makes it with all flavors and colors of jello. It is a staple at our family gatherings whether it's a holiday or not.

I am making this for a funeral. I found this recipe in a book. In my cook book, the instructions were not clear. I thought you were supposed to make the jello first. LOL! Glad I researched on line. I guess the jello in the fridge will be for my family!

I dont use the mandarin oranges but I do use finely chopped pecans. I also use my family's favorite jello flavors-they love raspberry or orange the best. This is a very easy and quick recipe, they ask me to fix it every holiday-my son even asked for it instead of birthday cake one year!

My great grandmother always brought to Thanksgiving dinner every year and it was my favorite dish, so I have carried on the tradition since she passed. We call it Hawaiian Salad though, because my family mixes in shredded coconut and marshmallows. We also prefer apricot jello, but it's very difficult to find these days. Peach jello tastes pretty similar though.
