GRANDPA'S MEATLOAF, STUFFED
PEPPERS AND MEATBALLS!
 
This mix will feed 10-15 people! I like using a small scoop, as my Grandchildren found it easier to hold onto "finger food", and we have no dog. Some people use rice, my one daughter can't have it, so I "fixed it". This made about 12 dozen meatballs, (144 ish), and I gave away a lot of it as well, we had a Summer reunion, was just enough! I hope whom ever tries this, has as much fun as I did. ENJOY!

very large bow for mixing (to hold 10-12 lb. of mix)
mini loaf pan (8 cavity is what we used)
roaster, or other large pot, for peppers and meatballs
sauté pan, for browning meatballs
melon scoop (mini ice cream type)
5 (24 oz. ea.) jars/cans pasta sauce (your choice)
5 lb. ground beef
1 1/2 lb. Polish sausage (skinless)
4 large eggs
1 1/2 cups Italian style breadcrumbs
1 medium onion, cut into wedges (optional, or 1/4 cup minced onion)
1/2 tsp. salt
1 tsp. pepper
1 tbsp. garlic powder
dash of both oregano and Italian seasoning (topper for meatloaf)

Preheat oven to 350°F.

Grind the 1st pound of Polish, followed by the wedged onion (works better) using a meat grinder (manual or electric) and then, follow through with the rest of the Polish, to get onion and juice for better results.

Place ground beef into mixing bowl, top with Polish, add eggs, breadcrumbs, salt, pepper and garlic powder, mix well. As you mix, with your hands, you need to feel consistency between the wet and the dry, to ensure a great batch!

Slice, on an angle, the tops of peppers to open, and remove seeds (choice of pepper is up to you, we used multi colors, for smoother sauce). Stuff the peppers with meat mix, and replace the "tops" of pepper, can pin with toothpicks, and set aside.

Open jars or cans of pasta sauce, and pour into roaster pan (or a very large crock), add peppers, cook on high (this gives you time for meatball madness).

Medium-high on your stove, use melon scoop to make meatballs, eject into hand, and use BOTH HANDS in a circular motion to form meatballs, and place them into your sauté pan.

Note: You want these to be almost completely browned, and move them to your pepper pot (they finish cooking over there).

Grab your mini loaf pan, and fill with meat mix, not quite to the top. Bake at 350°F for 35 to 45 minutes, depending on your oven! This makes mini meatloaf, idea for grand children, or little visitors.

This becomes a Multi-Meal solution for "What are we having THIS TIME"? You will have plenty of sauce to cover your meatloaf, pepper meal, and meatball mayhem, spaghetti, Mostaccioli, chili, ravioli (you are only as limited as your mind allows, but, once you make this, all bets are off!)

Makes about 12 dozen meatballs.
