ALA PILAF 
2 tbsp. butter
1/2 c. celery, chopped
1 med. onion, chopped
1 c. Ala, uncooked (cracked wheat bulgur)
1/4 tsp. dill weed
1/4 tsp. oregano
1/2 tsp. salt
1/4 tsp. pepper
2 c. beef or chicken bouillon
2 tbsp. chopped pepper
1 tbsp. parsley (optional)

Melt butter in large skillet. Add Ala, stir until wheat begins to brown. Add vegetables, stir 2 minutes more. Add seasonings and bouillon, bring to boil. Cover, turn heat low, simmer 15 minutes until water is absorbed. Stir in pimiento and parsley just before serving. 4 servings.

Variations: Other vegetables may be used. I use mixed frozen vegetables and also change to other seasonings. Also stir in meat, cooked chicken or ham.

This was a staple recipe in my family for more than 50 years. Sadly, Fisher's went out of business and "Ala" does no seem to be available. Bob's Red Mill red wheat bulgar is NOT a good substitute for Ala? Does anyone know if other golden wheat bulgar will substitute? Thanks.

Reis Bulgar Wheat (course) is an excellent substitute for Fisher's Ala (we enjoyed for 40 years) and is available on Amazon. Whole Foods also sells a 365 whole grain product (medium) that is very good, but not Fishers.

I agree with Elizabeth from Alaska. Fisher's ala was the best bulgar wheat by far. I wish someone would have continued the business. I love this recipe, but really miss Fisher's.

Re Ala bulgur pilaf recipe, here in Portland, Oregon Winco Foods has bulgur in bulk that is very similar to the old Ala I've had since being a kid.
